Easy and Healthy Granola Recipe

This recipe is truly the best healthy granola recipe ever. It's effortless to make and very delicious without it being overly sweet.

Ingredients:

  • 2 cups old fashioned oats
  • 3/4 cup nuts  (I used walnuts, almonds, and cashews)
  • 1/3 cup pepitas or sunflower seeds
  • 1/4 cup dried cranberries
  • 1/4 cup coconut flakes or chips
  • 1/2 teaspoon sea salt
  • 1/3 teaspoon ground cinnamon
  • 3 tablespoon raw cane turbinado sugar
  • 1/3 cup maple syrup
  • 1/4 cup coconut oil
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Preheat oven to 325 degrees F. Line a baking sheet with parchment paper.
  2. In a microwave-safe bowl, add maple syrup, coconut oil, and sugar—microwave for 35 seconds.
  3. In a mixing bowl, add oats, nuts, and dried fruits. Remove the wet ingredients from the microwave, add cinnamon, salt, vanilla extract, and stir to combine.
  4. Pour the wet ingredients onto the dry ingredients and mix well to combine. Spread the oats onto the baking sheet.
  5. Bake for 15 minutes. Remove from the oven and stir in cranberries and coconut chips—Bake for an additional 10 minutes.
  6. Remove from the oven and let it cool for at least 30 minutes.
  7. Once cooled, store in an air-tight container.
