The best LOADED NACHOS

Crispy tortilla chips topped with a ground beef and refried bean mixture topped with tomatoes, cilantro, sour cream, avocados, and melted cheese makes the perfect game night snack or appetizer!

Ingredients:

FOR THE NACHOS
  • 1 tablespoon olive oil
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1 lb. ground beef
  • 1 1/2 tablespoon taco seasoning*
  • salt to taste
  • 3 tablespoons tomato paste
  • 1 (15 oz) can refried beans
  • 1/3 cup water
  • tortilla chips*
  • 2 cups grated cheddar cheese
OPTIONAL TOPPINGS
  • 2 roma tomatoes, diced
  • 1 avocado, pitted and diced or guacamole
  • 1/4 cup fresh cilantro, chopped
  • Sliced jalapeƱos, fresh or pickled
  • Sour cream
  • Hot sauce
TACO SEASONING
  • 2 tablespoon chili powder
  • 1 1/2 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon paprika
  • 1 teaspoon granulated sugar
  • 1 teaspoon corn starch
  • 1/2 teaspoon oregano
  • 1/2 teaspoon black pepper

Instructions:

  1. Preheat a skillet over medium-high heat. Add olive oil and then add the ground beef, cook until the meat is no longer pink. Add the onion and garlic and cook for around 5 minutes or until the onion are soft and translucent. If your meat rendered too much fat, drain some of the fat.
  2. Add taco seasoning and salt to taste. Add tomato paste, refried beans, and water and stir until everything is well combined. Bring the heat down to medium and cook for an extra 5 minutes.
  3. Preheat your broiler. Assemble the nachos by adding half the tortilla chips to an oven-safe dish or baking sheet and top with half the beef mixture and half the cheese. Repeat one more layer.
  4. Broil the nachos for a few minutes to melt the cheese. Be careful not to burn the tortilla chips.
  5. Top with your choice of toppings and serve immediately!

Notes:

- The taco seasoning included in the recipe makes a little more than needed, but you can always store it in a spice jar for future use. - You can either use store-bought taco seasoning or use the one in the recipe. - I use a whole 9oz bag of tortilla chips, but you can use as little or as much as you like.
