Pork Carnitas Tacos

Carnitas Tacos

Ingredients
- 1/2 cup canola oil
- 2 1/2 pork butt or shoulder (or any pork meat good for stew)
- 1/2 teaspoon oregano
- 1/2 teaspoon cumin
- salt to taste
- 1 bay leaf
- 4 garlic cloves, coarsly chopped
- 1/2 cup water
- juice from 1 orange
- juice from 1 lime
Toppings
- Chopped cilantro
- Chopped white onion
- Pico de gallo
- Avocado
Instructions
- Start by clicking the "Saute" setting on your Instant Pot.
- Season the meat with oregano, cumin, and salt to taste. Massage the meat making sure every piece is nicely coated.
- Add oil to the pot and sear half the pork chunks on all sides. Transfer to a plate and repeat with the rest of the meat. Once done, press the "Cancel" button and add all the pork back to the pot. Add water, bay leaf, garlic, the juice from the orange, and juice from the lime along with half an orange rind. Toss to combine.
- Close the lid and set the vent to "Sealing." Pressure cook the meat for 35 minutes. Once done, let the pressure release on itself for 10 to 15 extra minutes.
- Remove pork from the pot and shred with two forks. Drain half the liquid from the pot. Set the Instant Pot on "Saute" once again and let the liquid reduce until there is only about 1/4 cup of liquid left.
- Add the shredded pork back to the pot and cook until the meat is crispy.
- Reheat the tortillas and assemble the tacos with your favorite toppings.
