Sweet Kale Salad with Healthy Poppyseed Dressing

Ingredients

Dressing
  • 1/2 cup Plain non-fat greek yogurt
  • 1/3 cup honey
  • 1/4 cup olive oil
  • 2 tablespoon apple cider vinegar
  • 1/2 teaspoon ground mustard
  • 1/8 teaspoon onion powder
  • 1 tablespoon poppyseed
Salad
  • 4 cups curly kale, stem removed and finely chopped
  • 2 cups broccoli matchsticks
  • 2 cups thinly sliced Brussels sprouts
  • 1/3 cup dried cranberries
  • 1/4 cup Pepita seeds

Instructions

  1. To make the poppyseed dressing: Combine in a small bowl, the greek yogurt, olive oil, honey, apple cider vinegar, ground mustard, and onion powder. Whisk until everything is mixed. Add poppyseeds and whisk again until everything is well combined. Set aside
  2. In a salad bowl, add chopped kale, sliced Brussels sprouts, broccoli matchsticks, dried cranberries, pepitas seeds, and about 1/2 cup of dressing. Toss to combine.

Notes:

The dressing recipe makes double the amount needed, but it can be store in the refrigerator for about a week.
