Easy Homemade Turkey Gravy

Quick and easy gravy from scratch perfect for Thanksgiving or any meal. It's rich, smooth, and absolutely wonderful!

Ingredients

GRAVY

• 1/4 cup fat drippings (or butter)
• 1/4 cup all-purpose flour
• 3 to 3 1/2 cups stock/drippings
• salt and pepper, if needed

TURKEY STOCK

• 2 tablespoons olive oil
• turkey giblets (neck and gizzards)
• 1/4 cup white wine
• 6 cups of water
• 1 onion, chopped
• 2 celery stacks, chopped
• 2 carrots, roughly chopped,
• 1 bay leaf
• 2 sprigs thyme
• 2 sprigs rosemary
• 4 sprigs parsley
• 2 garlic cloves
• 1 tablespoon whole peppercorn
• pinch of salt

Instructions

TO MAKE THE STOCK

1. To a stockpot on medium heat, add olive oil. Once the oil gets hot, cook the giblets until they develop some color. Add wine to deglaze the pot. Let the wine cook down for 3 to 4 minutes.
2. Add the remaining ingredients. Bring to a boil. Reduce heat and simmer for 1 to 2 hours. Cool broth for 1 hour. Strain through a fine-mesh sieve, discard the vegetables and giblets.

TO MAKE THE GRAVY

1. Start by straining the pan juices from the turkey. Add the juices to a fat separator and divide the fat from the juices.
2. To a saucepan over medium heat, add 1/4 drippings. Let it cook for 1 to 2 minutes, then whisk in the flour until lightly brown and let it cook for about 2 minutes.
3. Slowly whisk in pan liquid and stock and bring to a boil. Cook for 2 minutes, then reduce the heat to low and let it cook for about 10 minutes. Season with salt and pepper if needed.

Notes:

You can use store-bought chicken or turkey stock for this recipe if you don't wish to make your own.

The stock can also be made a few days in advance, but I usually make it as soon as I put the turkey in the oven. That way, it's done by the time we need it to make the gravy.

The turkey stock uses more than what you need for this recipe, but it freezes very well for about 2 months.
