Braised Short Ribs

Braised Short Ribs

Ingredients
3 tablespoons olive oil
3 lbs. English-Style short ribs
salt and pepper to taste
2 shallots, chopped
4 garlic cloves, smashed
1/4 teaspoon crushed red pepper
2 tablespoons tomato paste
1 1/2 cups red wine
3 cups beef stock
8 sprigs fresh thyme
4 sprigs fresh rosemary
a small bunch fresh parsley
1 bay leaf
Instructions
Preheat oven to 350 degrees F.
Heat olive oil in a dutch oven over medium-high heat. Season the meat on all sides with salt and pepper. Sear the meat on all sides working in batches. Once seared transfer the short ribs to a large plate.
Drain about 2 tablespoons of fat from the dutch oven. Cook shallots and garlic until tender. Add crushed red pepper, and tomato paste. Cook for 1 minute. Deglaze the pot with the wine and allow it to cook for about 2 minutes. Pour in the beef stock, add the fresh herbs and bay leaf. Place the short ribs back in the dutch oven meat side up.
Cover the dutch oven with the lid and bake for 2 1/2 to 3 hours or until the short ribs are fork-tender.
