Spaghetti al Pomodoro

Spaghetti al pomodoro is a flavourful and effortless pasta made with the simplest marinade sauce. It's light, easy, delicious and the perfect Summer pasta!

Ingredients

• 2 tablespoons extra virgin olive oil
• 3 cloves garlic
• 1 (28 oz) can crushed tomatoes
• 28 oz water
• 4-5 basil leaves
• salt to taste
• a pinch of sugar, optional
• parmigiano reggiano grinds, optional
• Parmigiano reggiano, grated
• 1 (16 oz) pack spaghetti

Instructions

1. Bring a pot of water to a boil and cook the spaghetti according to the package's instructions.
2. Smash the garlic with your knife and add to a cold pot with the oil. Turn on the heat to medium and let the oil infuse with the garlic. Once the garlic starts to brown slightly, add the crushed tomatoes and the water. Season it with salt and sugar. Add the basil leaves and Parmigiano Reggiano grinds.
3. Cook the sauce partly covered for 15 to 20 minutes until it has reduced and thickened slightly, stirring occasionally.
4. Drain the pasta (reserve some pasta water to thin the sauce if needed) and add to the sauce. Coat the spaghetti with the tomato sauce and serve it with the desired amount of Parmigiano Reggiano.
