Banana Bread

Banana Bread

This banana bread is moist, delicious, and full of banana flavor!
Ingredients
3 to 4 over-ripe bananas (about 1 cup)
1/2 cup granulated sugar
1/4 cup brown sugar
1/2 cup plus 2 tablespoons unsalted butter, slightly melted
3 tablespoons buttermilk
2 eggs
1/2 teaspoon vanilla extract
1 3/4 cup all-purpose flour
1/2 teaspoon ground cinnamon
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1 cup chopped walnuts, optional but highly recommended
Instructions
Preheat oven to 350 degrees F. Line a loaf pan with parchment paper and set aside.
Add flour, ground cinnamon, baking powder, baking soda, and salt to a bowl. Whisk everything together until well combined, then set aside.
Mash ripe bananas with a fork until smooth, set aside.
In a mixing bowl, Cream slightly melted butter with sugar until pale in color. Mix in the eggs, then adds the mashed bananas, buttermilk, and vanilla extract. Mix everything until well combined.
Fold in the flour mixture just until combined (DO NOT OVERMIX). Fold in 3/4 cup of walnuts.
Pour batter into the prepared loaf pan and sprinkle the top with the remaining walnuts. Bake for 50 minutes to 1 hour. Test it by inserting a toothpick in the center, and if it comes out clean, it's done. If the toothpick is still wet, let it cook for a few more minutes.
Remove from the oven and let it cool for about 30 minutes.
