Pumpkin Turnovers with Cream Cheese Glaze

Think of these as flaky and delicious portable pumpkin pies topped with a tasty cream cheese glaze. All the pumpkin pie flavors without any of the hassle.

Ingredients

Turnovers

• 1 frozen puff pastry sheet, thawed according to package's instructions
• 1/3 cup 100% pumpkin puree
• 3 tablespoons brown sugar
• 1 teaspoon pumpkin pie spice
• 1/4 teaspoon salt
• 1 teaspoon vanilla extract
• Eggwash (1 large egg plus 1 tablespoon of milk or water, beaten)
• coarse sugar, optional
• flour to roll out the dough, if necessary

Cream Cheese Glaze

• 1 oz cream cheese, room temperature
• 1/2 - 1 tablespoon butter, room temperature
• 1/4 cup powdered sugar
• 1 tablespoon milk
• 1 teaspoon vanilla extract

Instructions

1. Preheat oven to 400 degrees F and line a baking sheet with parchment paper, set aside.
2. Make the filling by adding pumpkin puree, brown sugar, pumpkin spice, salt, and vanilla extract into a small bowl. Stir to combine and set aside.
3. Roll out the dough using a rolling pin until is big enough to cut into 6 pieces (watch video). If you want your pastries bigger and puffier, don't roll out the dough and cut into 4 squares; instead, cut down vertically and horizontally. 
4. Divide the pumpkin filling evenly in the center of each square. Brush all around with egg wash, then fold in half diagonally, creating a triangle.  With a paring knife, make two slits on top of the pasty. Brush with egg wash and sprinkle with coarse sugar if using.
5. Bake turnovers for 15 to 25 minutes or until they are golden brown and puffy.
6. While the pastries are baking, make the glaze by mixing the butter and cream cheese. Once smooth, add the powdered sugar and a little bit of milk at a time. Add the vanilla extract and mix until combined.
7. Remove turnovers from the oven and place them on a cooling rack to cool for about 5 minutes.
8. Once cooled, drizzle the prepared glaze over the turnovers and serve warm.
