Sweet Potato Casserole

Sweet Potato Casserole

Buttery mashed sweet potato, crunchy streusel topping, and roasted marshmallows make for the most delicious sweet potato casserole. A Thanksgiving staple you and your family will love!

Ingredients

For the sweet potatoes

• 3 lb. sweet potatoes
• 1/4 cup unsalted butter, cold
• 1/3 cup half and half, room temperature
• 2 large eggs, room temperature
• 1/3 cup brown sugar
• 1 teaspoon vanilla extract
• 1 teaspoon salt, or to taste
• 1/8 teaspoon cinnamon

For the topping

• 2 tablespoons cold unsalted butter, cubed
• 3 tablespoons flour
• 1/4 cup brown sugar
• 1/2 cup chopped pecans
• 2 cups mini marshmallows

Instructions

1. Preheat oven to 425 degrees F. Line a baking sheet with parchment paper. Set aside.
2. Grease an 8x8 or 9x9 baking dish and set it aside.
3. Prick the sweet potatoes all over with a fork and place them on the baking sheet. Bake until the sweet potatoes are soft. Depending on the size, the time will vary anywhere from 30 to 55 minutes.
4. Remove the sweet potatoes from the oven. Leave the oven on and bring the temperature down to 350 degrees F.
5. Once the potatoes are cooled enough to handle, peel them and add them to a large bowl.
6. Mash the potatoes with a potato masher until smooth. Add butter, half and half, and mix until combined. Let the mashed potatoes cool for about 5 minutes.
7. Meanwhile, make the streusel topping by combining sugar, flour, and diced cold butter with a pastry cutter or a fork. Mix in the pecans and set aside.
8. Once the potatoes have cooled, mix in the eggs. Add brown sugar, vanilla extract, salt, cinnamon, and mix until everything is well combined.
9. Add the sweet potato mixture to greased baking dish and top with streusel topping. Bake for 30 minutes.
10. Scatter the mini marshmallows evenly and bake for an additional 10 minutes or until the marshmallows are puffy and golden.
11. Serve and ENJOY!

Notes:

1. I like to add cold butter to my mashed sweet potatoes because it helps them cool down a bit faster. Allowing the potatoes to cool before adding the eggs will prevent them from scrambling.
2. I serve my sweet potato casserole as a side dish, so I don't like it too sweet, but if you would like to serve it as a dessert or if you like it sweeter, you could always add 1/2 cup of brown sugar instead of 1/3 cup.
