Ingredients: 2 lb. bone-in skin-on chicken (such as thighs, leg quarter, or drumsticks); 2 tablespoons olive oil; salt and pepper, to taste; 1/4 green pepper, diced; 1/4 red pepper, diced; 1 small onion, diced; 5 garlic cloves, minced; 1 packet sazon goya with culantro and achiote; 1 teaspoon ground cumin; 1 teaspoon oregano; 1 chicken bouillon cube; 3 culantro leaves; 2 bay leaves; 1 tablespoon tomato paste; 2 whole celery sticks; 2 whole carrot sticks + 2 sticks diced; 1 big potato, diced; 1 big Japanese sweet potato, diced; 1 cup corn kernels; 8 cups water; 2 - 3 fidelini pasta nests * see notes; lime and fresh cilantro, to serve (optional)
